Requirements for Admission to Culinary
Arts Institute
- Maintain a 2.0 GPA in all school subjects
- Maintain excellent attendance and
professional attitude
- Participate in community service
- Be at least 16 years old and registered
in a high school program
Good
attendance and performance guarantee continued enrollment in the
program.
Culinary Arts Foundation
Classes
Prinicples of Nutrition
-
One
semester
Create balanced, nutritious menus. Gain an
excellent understanding of current issues in
diet and food processing.
Safety and Sanitation
- One semester
Safely handle
food in restaurant environments. At course
completion, the National Restaurant
Association's ServSafe® exam will be
administered. Passing students will be
issued a food handler's certificate good
throughout the United States.
Basic Baking Essentials
- One semester
Create quick
breads, cakes, pies, yeast breads, pastry creams
and pastries.
Basic Cooking
Essentials
- Two semesters
Prepare five-course meals. Techniques
include baking, broiling, grilling, poaching,
simmering, and sauteing. Includes knife
skills and kitchen procedures.
Menu Development
and Food Service Math
- One semester
Create menus and understand marketing
techniques. Learn about food costs and
sales methods.
