CVE Restaurant Careers/Food Preparation Career Training

CVE restaurant career training is an alternative to the CAI culinary arts programs.  Students working in the field benefit from classroom instruction along with paid on-the-job training.

ROP Culinary Arts Institute
offers three distinct culinary arts programs

The following programs are held at the ROP Culinary Arts Institute (CAI), 201 West Orangethorpe, Fullerton, CA  92832.  All classes at the Culinary Arts Institute are available to both high school students and adults.  High school students always have priority.  High school students and adults must pay materials fees for lab classes. High school students are provided with books and uniforms that must be returned before grades are issued.  Adults must pay fees for uniforms, textbooks, and additional equipment.

The Culinary Arts Foundation Certificate Program (1)

The Culinary Arts Foundation Certificate Program is designed to give students a comprehensive overview of the culinary arts field.  Students are welcome to enroll in two or more Foundation classes at the same time. Not all classes are offered every semester.

Basic Baking Essentials
Basic Cooking Essentials
Career Preparation Standards
Menu Development and Food Service Math
Safety and Sanitation
(This 54 hour class is required for certificate
)
Understanding the Principles of Nutrition


Advanced Culinary Certificate Programs

The following two comprehensive, certificate training programs (below ) are designed for the serious student wishing to enter the food service industry. Graduation Requirements (Word document)

Students are guided through a comprehensive program with specialization in cooking/chef training or baking/pastry training for one registration fee per semester.  Completion of all Culinary Arts Foundation courses is required to complete the Advanced Culinary Arts Programs.  Professional uniforms, tools, and textbooks are required.  Uniforms have been assigned a one-time purchase price. Tool and textbook prices vary.  Not all classes are offered every semester.


The Professional Chef Certificate Program  ~  (2)

To enter the Professional Pastry/Chef/Baker Certificate Program, students must have successfully completed the program at their high school, or have completed the Culinary Arts Foundation Program.  This comprehensive certificate program is designed for the serious student wishing to enter the food service industry.

Students must take the following classes:

Advanced Cooking
Garde Manger (includes appetizers and hors d’oeuvres)
Meat Cutting and Identification
Saucier
Meat Cutting and Identification
Restaurant Management and Operations

Two electives are also required for a certificate:

Catering and Event Planning
Chilling and Grilling
Ice Carving
International Cuisine
Pasta, Pasta, Pasta


The Professional Pastry Chef/Baker Certificate

To enter the Professional Pastry/Chef/Baker Certificate Program, students must have successfully completed the program at their high school, or have completed the Culinary Arts Foundation Program.  This comprehensive certificate program is designed for the serious student wishing to enter the food service industry.

Students must take the following classes:

Advanced Baking
Artisan and Specialty Breads
Cake Decorating I
Restaurant Management and Operations
 

Students must take two of the four electives listed below:

Cake Decorating II
Catering and Event Planning
Frozen Desserts
Ultimate Chocolate

The ROP Culinary Arts Institute in Fullerton provides career training in the classroom and in a professional restaurant/kitchen setting.


RETAIL RESTAURANT/FOOD SERVICE MARKETING (CC /CVE)

Career training that is not part of the professional training program offered by CAI is also available. Cooperative Vocational Education - Restaurant Careers/Food Preparation Career Training Classroom instruction combined with employer paid on-the-job training.
